Ostrich is a red meat, very similar in taste and texture to beef.  Ostrich is much lower in fat and cholesterol than beef and is actually slightly lower in fat and cholesterol than either chicken or turkey while being higher in protein than all three.  The American Cancer Society and the American Heart Association have both recommended ostrich for its health benefits.

We raise our ostrich on our own farm in Andover, New Jersey. Our feed program is based on organic alfalfa and corn, with no antibiotics or growth hormones ever, ever used.  An all-natural product!  These birds are free roaming until they are 10 to 14 months old, producing the most tender and delicious meat available.  Our ostrich has won numerous culinary awards for "outstanding quality."

Each adult bird yields approximately 75-90 pounds of meat, which comes primarily from the upper leg, back and thigh muscles.   Leg muscles are primarily used for Ostrich Burgers and upper muscles are used in steaks & fillets.

As with most cuts of very lean meat, ostrich is best cooked quickly over very high heat to seal in the juices.  Cooking more than medium rare is not recommended.

Kangaroo Meat

    Kangaroos are native to Australia, where they have been harvested for centuries for their hides and wonderful meat due to over population. As grazers, their diet consists of herbs and grasses. Most of the meat from a Kangaroo comes from its hind legs. All kangaroo harvesters must be licensed by the Government and pass a Government approved course which instructs them in aspects such as the laws controlling kangaroo harvesting, meat hygiene and animal welfare. In addition, their harvest equipment must be approved by a government inspector to ensure it meets the required standards. The RSPCA has described Kangaroo harvesting as "one of the most humane methods of animal slaughter possible."
    Kangaroo meat has a flavor that is compared to a fine Ostrich fillet. Kangaroo is a very lean red meat containing only 2% fat. Kangaroo is free of any growth hormones. This is a 100% all natural, free range product line. It is also mild in flavor and best when cooked medium rare over a high heat.


    Kangaroo is imported from Australia. 100% all natural,tender. Tastes like Ostrich. Makes for a terrific wine dinner pan roasted or on the grill. Please prepare rare to medium rare due to its low fat content.


    • Farm raised, our alligators live on a diet of frogs and fish.
    • Captive alligators have been shown to grow significantly broader jaws compared with wild alligators.
    • Alligator is a pure white meat with only two cuts available: the tenderloin, which comes from the tail, and the sirloin.
    • Cook alligator similar to calamari. Either a short cooking time with high heat (searing, pan frying, deep frying) or long and slow such as simmering in a tomato sauce, stewing or braising.
